東華大學環境學院一門通識課程不是在教室上課，而是要下田、走入廚房的「校園綠色廚房」，選修學生3年來成長3倍；食物安全、飲食健康受到重視。

主持課程的環境學院教授宋秉明表示，自2010年以來，東華大學已有超過600名、跨7個學院的大學生選修這門課，讓他們從每天接觸到的食物，進而思索全球環境議題。

宋秉明說，上課地點時常都在有機農田和健康餐桌上，對學生來說是一種人生的學習。課程與花蓮22家在地有機農場合作，並提供食材，建置食農教育平台，並於去年2月成立綠色廚房，一年多來已提供校內師生超過1萬5000份以上的健康餐點。

綠色廚房中的食材都是有機、低碳食材，像是有機米比薩、低碳健康便當、有機米製作的米粉、有機甘蔗做出的蔗糖、縱谷出產的友善時蔬等，一系列健康、不含添加劑的食材，不只顧及民眾健康，也讓農產品有出路，更讓環境、生態永續。(中央社)
