Excel 2007 資料編輯列的列高問題

第一個問題是,以往使用2003或是更之前的Excel，上方的資料編輯列都會隨著資料內容的高度而隨之自動調整,不過到了2007或以後的版本，卻都變成了固定的高度,我瀏覽的文件內容有些可能只有一行高度，有些可能會有10行,因此蠻需要這個自動調整資料遍及列高度的功能,不知要在哪裡設定?

第二個問題是,一直覺得excel 2003的版本上面的功能選單既清楚又明確,改成2007版本之後覺得上面選單很亂,很難找到自己想要的功能,那請問2007的excel哪裡有調整的功能可以讓選單回復到以前的樣子?

PS:不要叫我重灌2003,因為有一些功能還是要用到2007,比方說欄位可以大於256等等.
