嘉義縣向牛隻屠宰生產履歷邁進

【徐彩媚／嘉義報導】嘉義縣政府推動從農場至餐桌的履歷食材，並建立國產牛肉追溯制度，今年協助朴子肉品市場增設牛隻屠宰去骨室等相關設備，經試運轉及防檢局等單位會勘合格，將進一步申請屠宰生產履歷認證，讓嘉義縣牛肉產業發展邁入新紀元。

為促進牛肉產銷一貫化，嘉義縣肉品市場今年首開先例，於分切場增設牛隻去骨室，並增購2台冷藏運輸車輛，12月間辦理產銷履歷牛肉屠宰暨分切場所試運轉，縣府會同防檢局、中央畜產會等單位現勘合格，未來從活牛進場到分切完成均採一貫化，全程皆在攝氏15度以下低溫進行，讓牛肉品質符合生鮮安全要求。

嘉義縣肉品市場主任侯明在指出，這次試運轉合格取得屠宰登記證後，將申請屠宰生產履歷認證，預計成為全國第三家通過產銷履歷認證的牛隻屠宰場，為未來走向符合CAS肉品新鮮標準預做準備。

縣府農業處表示，我國牛肉自給率僅6.24%，年產量約6,169公噸，其餘皆為進口牛肉，嘉義縣肉品市場為全國第三大牛隻合法屠宰場，年屠宰牛隻約2300頭，銷售地點遍及台中以南各縣市，於中南部國產牛肉產業佔有重要地位。
