亞洲刀工賽 17歲彭昱翔奪銅

〔自由時報記者張存薇／台東報導〕台東專科學校十七歲學生彭昱翔參加第一屆六協盃亞洲青年刀工大賽中式刀工組，以過人的專注力與穩定度勇奪銅牌，也是獲獎選手年紀最輕的，他從國小就立志要當廚師，彭昱翔說，刀工是廚師基本功，一定要學好。

台灣廚藝美食協會日前舉辦六協盃亞洲青年刀工大賽，共兩百多位國內外選手一起競爭，中式刀工組則有六十位選手，決賽主題為「處理半隻雞的去皮去骨的烹飪前置作業刀工」，還要考菜色搭配，包括香港、馬來西亞、新加坡、泰國、加拿大等國際評審肯定彭昱翔的手藝，讓他順利拿下銅牌。

五專餐旅科三年級的彭昱翔說，小學就立志當廚師，在副教授洪維澤指導下，一有機會就練習，還到東市三葉餐廳打工，就是為了要學好廚師的基本功「刀工」。

有時一練就是四、五小時，練習常常切到手指頭，彭昱翔包紮傷口後繼續練，就是要一圓廚師夢。洪維澤說，這次比賽是臨場才知道題目，除考對食材質感的了解，也考驗用刀的純熟度，彭昱翔個性較內向、安靜，但也更能專注學習，因此脫穎而出。
