醫師籲 食材烤熟後再塗烤肉醬

【蔡明樺/台北報導】中秋烤肉是全民運動,衛福部食品藥物管理署今提醒,民眾應避免選購表面電鍍已剝落或有髒污的烤肉網,使用鋁箔烤肉時,勿讓烤肉醬接觸鋁箔,建議食材烤熟後再塗抹烤肉醬,避免重金屬在高溫下的溶出風險。醫師指,烤肉網應選購不鏽鋼最安全,廉價烤肉網多是電鍍而成,高溫下恐溶出鋅、鉛和鎘等重金屬,長期暴露會增加心血管疾病、高血壓等風險。

林口長庚醫院腎臟科醫師顏宗海表示,民眾常在烤肉網上再加1層鋁箔,避免食物烤焦吃下致癌物,但若在鋁箔上邊塗醬料邊烤肉,鋁箔紙恐在酸性醬料和高溫下溶出鋁,愛吃烤肉的民眾恐因鋁吃下肚而增加骨頭軟化、老年痴呆等風險,建議食物烤熟後再塗醬料。
